mid-month recipe: Kale & Soba Salad

One of my favorite go to cold salads for lunch.  Depending how hungry you are this can make 2-4 servings.

Ingredients:

4 Cups Kale 
2oz Soba Noodles (dry measure)
Soy Sauce
Sesame Oil
Sunflower Seeds

Directions:

1. Bring water to a boil.  Cook and drain soba noodles.  Set to the side.
2. In a small stock pot combine 2tblsp sesame oil.  After oil is hot add in your kale and a tablespoon of soy sauce.  Cook until kale has wilted.  Then add in soba noodles and mix well.
3. Remove from heat.  Divide into bowls and sprinkle sunflower seeds on top.
